My all time favourite breakfast (well, for now anyway)! I think I may have a wee obsession with it actually... I don't even consider starting my day without it.
I think what I love most about it, apart from the scrumptious flavour, is that its full of goodness too.
Mini Magoo's Funstuff Seeds & Nut Mix. A recent find of mine at the Old Spitalfields Markets in London last week. Their range of breakfast products are unique and extremely yum! Most are either gluten, wheat, dairy, or oat free, and many are a mix, so whatever your dietary requirements, your bound to find something!
Made up of Coconut flakes, linseeds, sunflower seeds, almonds, hemp seeds, pumpkinseeds and beautifully seasoned with cinnamon, its a healthy was to sweeten up your morning.
I never used to be a muesli/granola/cereal sort of person, but after recently discovering the benefits of these ingredients, oh and the moorish taste and textures, I've been converted!
A nutritional lesson...
Linseeds are a great source of dietary fibre, omega-3 fatty acids, manganese, magnesium, most B vitamins and phytochemicals which contains antioxidants.
Pumpkinseeds are high in protein, magnesium, potassium, manganese, phosphorus, copper, iron and zinc.
Hemp seeds contain essential fatty acids such as linoleic acid, omega-6, alpha-linolenic acid, omega-3 ad well as gamma-linolenic acid; alongside protein containing all 21 known amino acids which are essential for the adult body.
Sunflower seeds; small but powerful! Provide linoleum acid, dietary fiber, amino acids, vitamin E, B vitamins (thiamine, pantothenic and folic acid), they are also rich in phytosterols (good for lowering cholesterol), and have high levels of protein and minerals including magnesium and copper.
The perfect things to pair it with is a whole banana, roughly chopped raspberries, sliced blueberries and raisins. Well really, any choice of your favourite breakfast ingredients would do.
In my dishes I love a variety of textures - possibly why I crave this particular one so often. The creamy bananas, with the crunch Seed & Nut mix, with the tart raspberries and sweet blueberries, oh and the sticky raisins, its a match made in heaven. To top it all off, a generous dollop of natural greek yogurt, and oat milk.
Note: Oat milk is an amazing alternative to cows milk, it has a slightly nutty flavour, but when used with breakfast cereals/fruit or in a hot drink, you can barely taste the difference!
Abbey's Wholesome Breakfast Bowl
3 Tbsp Mini Magoo's Seed & Nut Mix
1 Whole Banana
5 Raspberries
10 Blueberries
2 Tbsp Raisins/Sultanas/Dried Cranberries
A generous spoonful Natural Greek Yogurt
1/2 cup Oat Milk
Slice bananas, raspberries blueberries and raisins. Place in a bowl however you like, separately mixed, layered, etc. Dollop yogurt on top, then pour milk over.
Its best when mixed all together and the raspberries have caused the milk to turn pinkish. Mmhmmmmm.
